Cooking by the campfire while may be a bit of a challenge, always ends up being so much fun. Each season, you can be creative with the fall camping recipes you want to make when you go camping. During the fall, it’s a good idea to use some ingredients that are popular this time of year to make something that can warm up your bones after a chilly hike.

Hot Eggplant and Tomato Stew

Yum. The mere sound of the dish sounds absolutely delicious. So maybe it’s not spiced pumpkin, but we’re sure it’ll taste just as good; especially while you’re out on the trail.

You’ll Need:

  • 1 small eggplant
  • 3 tbs olive oil
  • 3 cloves garlic
  • 1 tba panch phoron spice mix
  • ¾ tsp salt
  • ½ tsp sugar
  • ¾ tsp pepper
  • ½ tsp garlic powder
  • 1 14.5 ounce can diced tomatoes

Dice up the eggplant into chunks, put aside. Then, cook the panch phoron in the olive oil on medium-low heat. Add eggplant and garlic to the mix. Let it sizzle a bit, then throw in the salt, pepper, sugar, and garlic powder. Saute the eggplant until it’s fully cooked. Add tomatoes and let it simmer. Now, you’re ready to eat!

(Bonus: Combine with rice, quinoa, or a few slices of bread for some extra goodness!)

Easy Dutch Oven Thanksgiving Meal

You’re going to need a dutch oven for this one, and we can tell you that it will be totally worth it. No need to do your Thanksgiving dinner all fancy at home when you can do it at your campsite! Of course, it won’t be quite the same, but that’s what makes it authentic.

You’ll Need:

  • 1.5 lbs sliced turkey, shredded
  • 1 can cut green beans, drained
  • 1/2 can whole baby carrots
  • 2 jars turkey gravy
  • 2 boxes cornbread stuffing
  • 1/4 cup of butter

Have the turkey pre-shredded, put aside. Spread butter over the bottom layer and sides of the dutch oven so nothing sticks. Pour in green beans and add carrots on top. Pour gravy over carrots and green beans. Have the cornbread already ready according to instructions, and spread it over the mixture in the oven. Cover all the spaces with the cornbread. Add some butter for flavor on top. Cook on hot coals and add coals on top. Cook for about 25 minutes until bubbly and brown.

Campfire Chili

There’s seriously nothing better in the fall than a nice hot chili to come home to after a long day. Just because you can’t bring your slow cooker along camping, doesn’t mean you still can’t enjoy this delicious autumn meal.

You’ll Need:

  • 1 (16 oz) box elbow macaroni pasta
  • 1/2 cup shredded cheddar cheese
  • 1 (15 ounce) canned chili
  • A pinch of salt
  • chips for the chili

Boil the pasta in about 3 cups of water in a camping skillet. This should be enough for the pasta to absorb most of it. When it’s finished, add the canned chili, and let it simmer. Remove from the heat and scatter the cheese on top. Viola! You got yourself a homestyle meal right at your tent! Use the chips to scoop it up!

Baked Campfire Apples

While pumpkins are certainly the go-to food in autumn, we expect apples are more ideal for camping. They’re in season and you can do a lot with them, like making this amazing dessert!

You’ll Need:

  • 4 large apples, nicely-shaped apples
  • 2 tbs lemon juice
  • 1/4 cup dried cranberries
  • 2 tbs raisins
  • 2 tbs walnut chopped
  • 1/4 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • 1 tbs butter

Core out the apples so there’s a somewhat big hole in the middle. Brush lemon juice inside each apple. Then, mix the other ingredients in a bowl, but only use ½ tbs of butter. When it’s ready, press this mixture inside each apple, then using the other ½ tbs of the butter, place a slice on top of the center of each apple. Wrap in foil. Cook the apples near hot coals or in a dutch oven for about thirty minutes, until the ingredients inside are nice and gooey.

(Bonus: You can add other ingredients to the mixture, like chocolate, caramel, apricots, or whatever else floats your boat!)
